I'm currently making a family tree and my great great great grandmother's name was Anne-Marie Von Rammstein. Are all names with Stein at the end Jewish?

NO! All names with "stein" "berg" "burg" "stern" "ski" "sky" "er" "vich" "vitz" are not necessarily Jewish.
Any name can be Jewish. Some names are viewed as Jewish in the U.S. as a large portion of immigrants with certain names were Jewish while back in their country of origin the same name was used by Jews and Christians. People in Europe did not have surnames until the last milleninum. When they got through taking a surname it wasn't impossible for legitimate sons of the same man to have a different surname and still each could have shared their surname with others unrelated. Some will say we are all related if we go back far enough. However, the root person of your surname will not necessarily be the root person of someone else with your surname. They were based on a)being the son of someone b)where they lived c)some characteristic about them d)their occupation.
Also Jews are not in agreement on what a Jew is.
Many branches of Reform Judaism defines a Jew by the religion only.
Orthodox and Conservative Judaism defines a Jew by the mother, not the father or necessarily the religion. An Orthodox Jew will tell you if a person has a Jewish mother they are a Jew even though they no longer consider themselves part of the Jewish faith.

I knew someone whose maiden name was Jacobs. Jacobs just means son of Jacob. Christians gave their children names from the Old Testament. When surnames were taken sons of men named Jacob frequently became Jacobs.
Reply:That is a logical assumption, but there might be an exception to the rule somewhere.
